Monday Spotlight

Encouraging
Really Witty
Interested in what people have to say
Needs to open a restaurant

What to say about Erin? Where do I start? Erin and I have been BFF's since we were 12-13 yrs old. We met in Jr. High and it was love at first site. We've pretty much been joined at the hip ever since. Lately she's been calling me her "little kitty." She's my boo. Fo' Life

Erin has always been funny, but lately, I'd say the past couple years or so, she's amped up her funniness like 20 fold. She's subtle and she cracks me up. She uses words like "Him's" and "Her's." I love it, but it drives my husband Scott NUTS. Here, I'll use it in a sentence.

" Him's is tired and hungry, Him's needs a nap" Even as I type this, I laughed. Scott would roll his eyes. I think secretly he loves that Erin does that too :)

Erin has a blog, but she never updates it. Like EVER! I think she believes she has nothing interesting to say, but I disagree. Just this weekend she had 5 bud lights and was almost pressured into doing whisky shots with someone. She didn't do the whiskey shots, but my girl had 5 bud lights! I don't know about you, but I'm amused by that.

She's really fashionable too. She always looks put together. I wish I was like her in that regard.

I think she should open a sandwich shop. I think she should persue her love of the culinary arts. She's a good cook and a healthy cook. She always tries to eat good food and her weakness is salsa. I'm sorry Erin, but when you're weakness is a sleve of oreos then we'll talk. Salsa? That's just veggies. I know, I know, the chips are the vehicle, but c'mon, the girl's "weakness" food is still pretty healthy.

Really, I could go on and on about this girl. She's my sis. Love my sis.

Ladies and Gentleman, readers from around the globe. I present to you Erin.

Favorite Color?
This is a tough question for me. I like every color for what it is and what type of feeling/mood it can create. I'm really diggin' purple right now, and I make sure to wear something purple everyday... just like a true Unicorn from Sweet Valley High!

What are you most proud of?
I finally got my bachelors degree from ASU last year, and I am so proud of myself for sticking with it and graduating. No more nightmares of failing to appear for a final.

Republican or Democrat?
Neither. I'm a registered Independent. I'm very liberal, but I have a hangup with paying so much in taxes. Catch-22.

What’s on your pizza?
Always mushrooms, and if I'm feeling devilish I'll add pepperoni. With a side of ranch, of course! I always try to get a salad too just to make myself not feel as guilty.

If you could do anything for a living, what would you do?
I would own my own restaurant, serving healthy, yet tasty, seasonal fare.... and/or a (traveling) food critic.

What do you love most about your husband/boyfriend?
I'm not married, but I do have a very special someone in my life. If he plays his cards right, he might get lucky to have me in his life on a permanent basis. ;) I don't know what I love most about Eric, but the top three would have to be his enthusiasm in every facet of his life, his compassion for others and his ambition.

Life would be easier if…
Life would be so much easier if I had an Alice Nelson (housekeeper on The Brady Bunch) full-time: someone to tidy up the place, do the grocery shopping and add some sassy zingers to the conversation.

Sis! You're such a sweetheart! I know, I need to update my blog. I wrote something today and erased it... it wasn't about the bud lights, btw. Scott totally loves my baby talk, and when I see him rolling his eyes, him's still loves me!
