I got that job everyone! I start on Monday. It's nice to start working again. Scott took me out last night to this cool restaurant in Boulder. It was sort of an urban setting but cozy booths. It was Latin food. I had the chef's sampler which was a crab empenada with avocado, a chile reyeno and cichironnes. Yes I totally spelled all those wrong, I know erin.
The chichirones, I didn't want, but I thought what the hell, I'll try pork rinds. They were home made, came in a brown paper bag that you put hot sauce and lime on and shook up, then dipped in creme fresh. I had two small pieces, but it wasn't for me. I would think that if you liked pork rinds they would be great though. Everything else was really good too. Scott went off the veggie thing and had duck with mole sauce. It was soo good. I only had 2 pieces of pork rinds so I don't consider that cheating with the pescatarian thing. We also got a bottle of a Chilean wine, which was so good.
So, anyways, Yea for me!

Chicharrones?! That is definitely not on the pescetarian diet. Chicharrones is the only word I remember from the "Let's Go To A Carnival!" vocab from Spanish 101. For some reason, good mexican food is hard to come by in Denver. Lucky you for finding a good spot!
